Easiest Homemade Chicken Pot Pie

- 1 onion, chopped
- 2 T unsalted butter
- ½ bag of frozen mixed vegetables (no need to thaw)
- 3 cups shredded chicken (I had some in the freezer)
- 1 can cream of chicken soup
- ½ cup whole milk
- ½ cup sharp cheddar cheese
- salt and pepper to taste
- 6 Leftover Joy the Baker biscuits
- Saute your onions in the butter.
- Add the mixed vegetables and cook until thawed.
- Add everything else (not the biscuits) and stir until combined
- Pour into a shallow baking dish.
- Top with thawed biscuits.
- Bake for 15 minutes or until biscuits are warmed.
