Valentines Day Breakfast

The most important meal of the day is breakfast right?  And one of the best holidays is Valentine’s Day, right?  Then why not combine the two and serve a delicious themed breakfast on Valentine’s Day.  I’m glad that it falls on a Friday this year, my Mister’s day off.  That way we can all linger over the breakfast table a little while longer.  Here are three recipes that you can whip up in no time flat for your Valentine. Enjoy every moment of the day!

Strawberry Pancakes (I actually served these for dinner tonight).  I used Rachael Ray’s Strawberry Pancakes recipe from her magazine.  Things I would change: chop your strawberries more fine.  Use less of them.  Or puree them and lower the milk amount.  They were TOO moist.  But, they had great flavor!

Heart in the Hole.  I made this yesterday for my little Valentine for lunch.  So quick and easy.  I used Great Day Farms’ organic eggs because they taste amazing and I know are healthy for my family.  Just put some butter in a heated skillet, cut out a heart shape (with a cookie cutter) of the bread, and drop the egg in.  Let it cook until your liking.  How runny do you like your egg?

Strawberry Nutella PopTarts.  I made the smores version of these last week at a friend’s house and we gobbled them up.  Tomorrow morning I’m taking some fresh strawberries, mashing them with a fork, already made pie crust, a cookie cutter, egg wash, and delicious creamy nutella.  Amazing pop tarts await me!  Yay!

Mini Nutella Cupcakes with Nutella Buttercream

World Nutella Day.  Isn’t it a great day!

Just in time for the Super Bowl too – so I could have a reason to make these wonderful bites of deliciousness and not eat them all.

I searched the internet, then combined a couple of recipes.

1/2 cup self-rising flour

1/4 teaspoon salt

2 tablespoons unsalted butter, softened

1/2 tsp vanilla

1/4 teaspoon almond 

1/4 cup sugar

8 ounces Nutella –

2 large eggs

2 tablespoons skim milk

Cream eggs and butter and extracts, add in nutella.  Scrape sides.  Add in dry ingredients, alternating with the milk.  Mix until you get a smooth consistency. 

I used mini cupcakes liners – makes about 30-36.  Fill no more than half way.  Spray liners of course.  Bake at 325 for about 15 minutes, don’t overcook these babies.

Frosting:

1 1/2 sticks unsalted butter, softened

1/2 cup Nutella, mine was pretty heaping of a 1/2 cup

3/4 tsp vanilla

1 Tbs skim milk

1 cup sifted powdered sugar

Mix butter and nutella.  Then vanilla and milk – finish with sugar. 

Don’t eat it all before you get it on the cupcake.

Chocolate Chip Nutella Cookies

Finally bought some Nutella when my parents were here over the summer. Got around to using it tonight for these yummy cookies.
Chocolaty – with a hint of hazelnut goodness known as Nutella.

1 1/2 sticks of unsalted butter, room temperature
3/4 cup of brown sugar
3/4 cup of white sugar
1 cup of Nutella
1/2 teaspoon of vanilla
2 eggs
2 cups all-purpose flour
1/4 cup of unsweetened cocoa
1/2 tsp baking soda
1/2 tsp salt
1 cup of chocolate chips

Cream, then combine dry. Fold in chips. 350, greased cookie sheet, small cookie scoop, 11-12 minutes depending on cookie sheet and other variables. Mine cooked perfectly at 11:30, but check it the first time around at around 10 to see how far you have to go to get that perfect doneness.
